福永健治教授・細見亮太准教授

水産物の機能性について研究しています。水産物の機能性といえばDHA、EPAなどのn-3系多価不飽和脂肪酸の機能が取り上げられますが、食品化学研究室では魚肉たんぱく質の脂質代謝に及ぼす影響を検討しています。さらに、プロタミンなど、特殊なたんぱく質の機能についても検討しています。

また、水産物だけでなく、動物性食品全般についても、新規の機能性や保存法などを検討しています。
